Roasted Potatoes (Val)

4 medium potatoes
2 tb olive oil
1 clove garlic, minced (or more)
1/2 tsp cracked black pepper
1/2 tsp dried thyme or oregano
Salt, pinch

Peel potatoes & cut in 1/2 lengthwise
Cover cookie sheet with aluminum & spray with vegetable spray
Place potatoes flat side down
Score with with thin slices (not all the way through)

Combine ever thing and brush evenly over the potatoes

Roast at 375 for 45 to 55 minutes
